National Prime Rib Day falls on a Saturday this year (April 27) and that just so happens to be one of the 2 days each week when we serve the best prime rib in Des Moines! We are famous for our mouthwatering hickory-smoked meats at Wobbly Boots Roadhouse in Clive and our hickory-smoked Prime Rib Dinner is a delicious way to celebrate this fantastic cut of steak.
Why Is Prime Rib So Delicious?
Prime rib is one of the most savory, juicy, and flavorful cuts of meat you can get from a cow. This particular cut of beef is sometimes referred to as a standing rib roast, and it’s the finest cut of beef you will find. It is cut from the primal rib, one of the eight primal cuts of beef. The amount of marbling found on prime rib makes a big difference in the quality. The more fat that is woven throughout a particular cut, the more tender and juicy the final product will taste.

We take special care in the way we prepare prime rib at our family restaurant in Des Moines. Every single serving is hand-cut, perfectly seasoned, and slow-smoked for 5 hours to marvelously juicy and flavorful perfection. Our prime rib dinners are so special, as a matter of fact, that they are only available every Friday & Saturday night after 5 pm. You can order it as either a 10-oz or a 14-oz cut and it comes with a great big slice of Texas toast and your choice of two of our amazing homestyle side dishes.

Even though Wobbly Boots Roadhouse‘s homemade Mac & Cheese is most often considered a side dish, for some people it’s a big reason they dine at our BBQ restaurant in Des Moines. Our version is so rich, creamy, and savory that it’s nearly as famous as our award-winning hickory-smoked BBQ!
As a matter of fact, we make an entire meal out of it on the kids’ menu and it’s even become a main ingredient on one of our signature burgers. (Appropriately known as the Mac & Cheese Burger.) If you are a mac & cheese fan (and we know you all are) you will be interested to learn the intriguing facts we found out about this tasty treat.
Since macaroni is pasta, many assume it’s an Italian dish but it is actually of English origin.
It’s a Classic
There is evidence that this dish made of pasta and cheese has been around since the 14th century. Two recipes were found in medieval cookbooks. One was made with parmesan and pasta and the other contained fresh, hand-cut pasta sandwiched between a mix of melted butter and cheese.
From Italy to the U.S.
Even though this dish is English in origin, the story of mac & cheese coming to the United States did begin in Italy. American president Thomas Jefferson discovered the food while in Paris. In 1793, he commissioned the American ambassador to Paris to purchase the machine used for making macaroni. Not quite able to recreate the taste he fell in love with, Jefferson later had macaroni and parmesan cheese imported to Monticello, his primary plantation. There he served this favorite food at a state dinner as “a pie called macaroni” and our country’s fascination with mac & cheese was born.

Apparently, it is said the burgundy wine is the perfect wine to pair with mac & cheese. We’re definitely willing to give that a try, but we also enjoy it with an ice-cold Iowa-brewed beer or a big refreshing glass of iced tea and our youngest diners seem to enjoy it with a healthy glass of milk.

Big City Flatbreads
Very similar to pizza (which everyone loves) flatbreads are made form a thinner, crispier crust using lighter toppings and sauce. Often something other than tomato sauce is used, as you’ll see in the following irresistible flatbread creations we’ve come up with at Wobbly Boots Roadhouse.
Wobbly Boots own crab rangoon filling slathered on our flatbread pizza crust, topped with our five cheese pizza blend and finished with fried won tons and a sweet chili drizzle. A customer favorite!

Buffalo Bacon Chicken & Jalapeno

We start with our thin flatbread pizza crust, spread on our homemade cheese sauce, add our five cheese pizza blend, and top all of that with smoked ham, bacon crumbles, lettuce, and tomatoes, all drizzled with ranch dressing.
Spinach Artichoke Chicken
Our homemade spinach artichoke dip generously spread over our flatbread topped with five cheese mozzarella blend, chicken, diced tomatoes, and finished with Parmesan cheese.

For those very few non-BBQ fans out there, and when the BBQ lovers are simply in the mood to try something different, the gigantic salads and creative flatbreads at our family restaurant in Des Moines are excellent items to tempt your taste buds. Just like all of the meals coming out of the kitchen at Wobbly Boots Roadhouse, they are absolutely delicious!
Fried pickles are a delicious appetizer, but surprisingly enough, not a menu item that a lot of people have given a try. That seems strange to us because just about everyone loves pickles and pretty much no one can resist anything deep-fried. Also, they taste delicious paired with the best BBQ in Des Moines! The fried pickle is actually a delicacy throughout the southern United States and we’ve brought our own delicious version to Iowa at Wobbly Boots Roadhouse.
Whether you decide to have fried pickles for a snack, an appetizer, or as a delicious side dish, it’s an item that is sure to be a new favorite once you’ve tasted it. Here at the Boot, each order consists of a half-pound of pickle chips that have been hand-breaded in our specially seasoned flour and then fried to a beautiful golden brown. We serve them with a side of chipotle ranch, and they even taste amazing dipped in our very own house-made BBQ sauce.
Who Invented the Fried Pickle?
While our family restaurant in Des Moines has one of the best fried pickle recipes you’ll ever experience, we can’t take credit for inventing this tasty treat. As with most origin stories, more than one person takes credit for coming up with the recipe. There is record of a “French Fried Pickle” recipe being published as early as 1962 for the Food Editors Conference in New York.
Another story, which sounds like it originated too late to truly be the original, is from the Hollywood Cafe out of Hollywood, Mississippi. Their tale from 1969 begins with a crowded restaurant and a cook without enough catfish to feed them all. In desperation, he reached for the industrial-sized jar of dill pickles that was handy, rolled them in the catfish batter, dropped them in the fryer, and served them to the patrons. They were an immediate hit.
Perhaps the most popular story, which seems to fit into a more plausible time frame, is out of Atkins, Arkansas. In 1963, Bernell “Fatman” Austin owned the Duchess Drive-In across the highway from the Atkins Pickle Plant. (FYI: Atkins is known as the pickle capital of Arkansas!) Staring across the street at the pickle plant, Bernell was inspired to create a recipe. That particular recipe is a well-guarded, family secret to this day. You can now only get a taste of Bernell’s original creation once a year at the annual Picklefest held in May in Atkins. The family dishes up about 2,500 orders of the “Fatman’s Original Fried Dill Pickles” at every festival and the money raised is used for scholarships and charities that Bernell supported.
At some point in the late 1990s, three high school friends brought the southern deep-fried pickle to the Minnesota State Fair, calling them the “Preferred Pickle.” They were so popular, the same three friends began manufacturing them under KWF Foods and selling them to the food service industry.

Smoked Meat on a Bun
All of our slow-smoked meats are served on a freshly toasted bun. Sandwiches are always served “wet” (sauced) but feel free to ask us to leave it off if you prefer to sauce the sandwich yourself. Each of these plates also comes with your choice of one of our homestyle side dishes.
A sweet and smokey Italian sausage. We slow-smoke our sausage rope then slice into pieces. A hidden house favorite… Try it & you’ll love it.
Our pork is covered in our house made rub and then slow-smoked over hickory for 16 hours, trimmed, and hand-pulled.
Our brisket is generously rubbed with our secret house seasonings and then slow-smoked over hickory for 10 hours. We thick slice it with all the juice and bark to ensure the most mouthwatering and tender brisket possible.

If you’re truly enjoying your BBQ, you’re going to get some on you. That’s what napkins are for, and we’ve got plenty of wet wipes and soap in the bathroom to clean you up when you’re done.
We encourage everyone, especially the kids, to try something new every time you order from our menu. It’s the best way to expand your tastes and find new flavors to love. If everyone shares a little bit of what they ordered with each other, you’ll all get to try lots of new things.

“WOW!!! Went for lunch one afternoon to check this place out. My husband ordered the tenderloin with a side of beans, and I ordered the burnt ends sandwich with a side of fries. The burnt ends were falling off the bun and were delicious! Very generously heaped! The tenderloin could have filled two or three buns easily and had an amazing breading. Everything was very good. The service was fantastic – refilling drinks and getting us everything we needed before we asked. Christina was our server and was very friendly and personable. The atmosphere and look of the place is cool and very original country type style, fitting with the food served.
