The type of BBQ you’ll discover at Wobbly Boots Roadhouse in Clive was inspired by many different BBQ masters from around the country. We lovingly refer to it as a “hybrid style” of BBQ combining elements of the dishes found in the BBQ meccas of the U.S.A. – Kansas City, St. Louis, Memphis, and Texas.
We took our favorite parts away from each of these styles and put them all together to create a taste that people can’t seem to get enough of! Luckily for all of you, we’re open 7 days a week, year-round, and smoke our meats on a daily basis.
Smoked Over Hickory
The key to creating the Wobbly Boots flavor that is so popular around these parts is the hickory-smoked goodness we infuse into each bite. First, we slow-smoke our succulent meats over hickory, allowing the incredible flavors of each type of meat to come through boldly. Our clever chefs have figured out exactly how long each meat needs to spend in the smoker to become it’s flavorful best.
Next, those meats are coated (or served with a side of) our extraordinary house-recipe BBQ sauce. The end result is a plate full of the best hickory-smoked BBQ in Des Moines that will leave you fully satisfied yet anxious to come back again for more!
You won’t find our BBQ sauce anyplace else but right here. (Unless you pick up a bottle to take home with you or visit the Wobbly Boots Roadhouse at the Lake of the Ozarks run by our good friends, that is.)

Saturday, June 22, 2019, is National Onion Rings Day. America has a slight obsession with all things fried, but how can you blame us when it tastes so doggone good? Fryers create some of the best bar food in Des Moines. Our Famous Onion Rings are a perfect example of that.
At Wobbly Boots Roadhouse in Clive, we’ve created a side dish so incredible in our onion rings that they’ve earned a spot on the appetizer menu too! Some even say our giant onion rings are practically a meal by themselves!
The Boots’ Famous Onion Rings
First, we start with great big, fresh, crispy yellow onions. These are cut into thick rings, then bathed in buttermilk. After that, we hand-bread them in our specially seasoned flour. The final step is placing them in the fryer until they are a perfect golden brown.
A side of chipotle ranch finishes the preparation, and your server brings them out to you hot, crisp, and irresistible! The only bad thing about our onion rings is the few moments you have to wait for them to cool off enough to bite into!
How Do You Dip?
Your favorite family restaurant in Des Moines prefers to serve our delicious onion rings with a side of chipotle ranch, but they are also incredible dipped in ketchup or our house-made BBQ sauce. During our research, we found a few other sauces that people enjoy dipping their onion rings into. One older cookbook calls for a sauce made of melted butter and mustard. Here are a few other variations we came across. How do they sound to you? (Personally, we’d stick with the chipotle ranch!)

Onion Ring History
As with many popular foods, the official origin of the onion ring is unclear. Many different stories lay claim to creating this brilliant food. Here are a few of those stories.
- A Crisco advertisement in 1933 showed up in the New York Times featuring a recipe for deep-fried onion rings. It called for rings of onions to be dipped in milk and then dredged in flour. (That sounds about right to us!)
- Kirby’s Pig Stand, a restaurant chain founded in Oak Cliff, Texas with over 100 locations across the U.S.A in the 1940s, claims to have created the onion ring in the early 1920s. They also state that Texas Toast was all their idea too.
- Even before that, the Middleton New York Daily Times published a recipe for French Fried Onions in 1910. They don’t claim that this is the original onion ring, but it is dated earlier than the other claims and it sounds pretty familiar.
- One more recipe discovered in John Mollard’s cookbook “The Art of Cookery Made Easy and Refined” in 1802 was titled “Fried Onions with Parmesan Cheese.” Calling for rings of onions dipped in a batter of flour, cream, salt, pepper, and Parmesan cheese all deep fried in “boiling” lard, this is definitely a predecessor to the onion ring we know and love today.

Even though Wobbly Boots Roadhouse‘s homemade Mac & Cheese is most often considered a side dish, for some people it’s a big reason they dine at our BBQ restaurant in Des Moines. Our version is so rich, creamy, and savory that it’s nearly as famous as our award-winning hickory-smoked BBQ!
As a matter of fact, we make an entire meal out of it on the kids’ menu and it’s even become a main ingredient on one of our signature burgers. (Appropriately known as the Mac & Cheese Burger.) If you are a mac & cheese fan (and we know you all are) you will be interested to learn the intriguing facts we found out about this tasty treat.
Since macaroni is pasta, many assume it’s an Italian dish but it is actually of English origin.
It’s a Classic
There is evidence that this dish made of pasta and cheese has been around since the 14th century. Two recipes were found in medieval cookbooks. One was made with parmesan and pasta and the other contained fresh, hand-cut pasta sandwiched between a mix of melted butter and cheese.
From Italy to the U.S.
Even though this dish is English in origin, the story of mac & cheese coming to the United States did begin in Italy. American president Thomas Jefferson discovered the food while in Paris. In 1793, he commissioned the American ambassador to Paris to purchase the machine used for making macaroni. Not quite able to recreate the taste he fell in love with, Jefferson later had macaroni and parmesan cheese imported to Monticello, his primary plantation. There he served this favorite food at a state dinner as “a pie called macaroni” and our country’s fascination with mac & cheese was born.
Making the Top Ten
Mac & cheese is consistently in top ten lists for favorite comfort foods as well as favorite kids’ foods. (We believe the mac & cheese at the Boot is delicious enough to claim the #1 spot on both of those lists!)
A Famous Color
Macaroni & cheese become a Crayola crayon color in 1993 as a part of their orange hue family.
The Perfect Pairing
Apparently, it is said the burgundy wine is the perfect wine to pair with mac & cheese. We’re definitely willing to give that a try, but we also enjoy it with an ice-cold Iowa-brewed beer or a big refreshing glass of iced tea and our youngest diners seem to enjoy it with a healthy glass of milk.

This amazing side dish gets its own national holiday on the calendar every year – July 14. (Of course, when you come into our Des Moines family restaurant, we’re ready to “celebrate” mac & cheese with you any day of the year, 7 days a week!)

Smoked Meat on a Bun
All of our slow-smoked meats are served on a freshly toasted bun. Sandwiches are always served “wet” (sauced) but feel free to ask us to leave it off if you prefer to sauce the sandwich yourself. Each of these plates also comes with your choice of one of our homestyle side dishes.
A sweet and smokey Italian sausage. We slow-smoke our sausage rope then slice into pieces. A hidden house favorite… Try it & you’ll love it.
Our pork is covered in our house made rub and then slow-smoked over hickory for 16 hours, trimmed, and hand-pulled.
Our brisket is generously rubbed with our secret house seasonings and then slow-smoked over hickory for 10 hours. We thick slice it with all the juice and bark to ensure the most mouthwatering and tender brisket possible.

The Famous Pork Tenderloin – Wobbly Boots-Style
We simply had to try our hand at this famous dish, and according to the diners at our family restaurant in Des Moines, we’ve done an outstanding job! We took this classic sandwich and turned it into something simply irresistible. Even the pickiest pork tenderloin fan will be impressed with this big boy!
We start out with a more-than-generous portion of meat. (This is one GIGANTIC sandwich!) Next, our chefs hand-dip it in buttermilk, followed by a coating of expertly seasoned flour and breadcrumbs. Bacon Egg & Cheese Burger
We serve up the best brunch in Des Moines every Saturday & Sunday, which means our breakfast options are every bit as tempting as our lunch and dinner items. When you simply can’t pick which one you’d rather have, or if it happens to be a weekday but you’re craving our breakfast, we’ve combined it all on a big, juicy burger! We took our flavorful Farm Boy Burger and topped it with crisp bacon, a fried egg, and good ol’ American cheese. Breakfast for dinner on a fresh, soft bun!
If you’re trying to include more vegetables in your diet but the smell of our savory, hickory-smoked meats is tempting you to skip the salad, you don’t have to. Our Cowboy Cobb, also referred to as the “King of Salads,” allows you to have your salad and your BBQ too! Hickory-smoked ham, turkey & bacon with lettuce, tomato, mozzarella cheese, and avocado mayo served between two pieces of sourdough toast.
Our tender slow-smoked brisket and our delicious turkey breast with pepper jack cheese and a touch of BBQ sauce on a toasted bun. Delicious!
Prime Rib French Dip
Smoked prime rib and melted mozzarella cheese served on a lightly toasted ciabatta roll with a side of au jus.
Prime Rib Melt
Succulent, house-smoked, shaved prime rib topped with Swiss on grilled sourdough bread. It’s served with our house-made horsey sauce on the side.
Our house-smoked sweet Italian sausage with sautéed green peppers and onions topped with melted Swiss cheese and served on a toasted ciabatta.
Our all-white chicken breast charbroiled to perfection, topped with our double-smoked ham and Swiss cheese, and served on a toasted bun with lettuce, tomato and a side of honey mustard.
An all-white chicken breast, hand-breaded and fried to golden perfection, smothered in chipotle buffalo sauce and topped with crispy bacon and pepper-jack cheese. Pickle, lettuce, onion, and tomato available upon request.

Smoked beef brisket with smoked sausage drizzled with our house recipe BBQ sauce and served on two slices of golden Texas toast.
A customer favorite! Two slices of sourdough bread with American & Swiss cheeses, crisp bacon, and smoked ham & turkey all grilled to perfection.

An Iowa tradition! This generous cut of pork tenderloin is tenderized, hand-dipped, then breaded in
