Wobbly Boots BBQ
Even though Wobbly Boots Roadhouse‘s homemade Mac & Cheese is most often considered a side dish, for some people it’s a big reason they dine at our BBQ restaurant in Des Moines. Our version is so rich, creamy, and savory that it’s nearly as famous as our award-winning hickory-smoked BBQ!
As a matter of fact, we make an entire meal out of it on the kids’ menu and it’s even become a main ingredient on one of our signature burgers. (Appropriately known as the Mac & Cheese Burger.) If you are a mac & cheese fan (and we know you all are) you will be interested to learn the intriguing facts we found out about this tasty treat.
Since macaroni is pasta, many assume it’s an Italian dish but it is actually of English origin.
It’s a Classic
There is evidence that this dish made of pasta and cheese has been around since the 14th century. Two recipes were found in medieval cookbooks. One was made with parmesan and pasta and the other contained fresh, hand-cut pasta sandwiched between a mix of melted butter and cheese.
From Italy to the U.S.
Even though this dish is English in origin, the story of mac & cheese coming to the United States did begin in Italy. American president Thomas Jefferson discovered the food while in Paris. In 1793, he commissioned the American ambassador to Paris to purchase the machine used for making macaroni. Not quite able to recreate the taste he fell in love with, Jefferson later had macaroni and parmesan cheese imported to Monticello, his primary plantation. There he served this favorite food at a state dinner as “a pie called macaroni” and our country’s fascination with mac & cheese was born.

Mac & cheese is consistently in top ten lists for favorite comfort foods as well as favorite kids’ foods. (We believe the mac & cheese at the Boot is delicious enough to claim the #1 spot on both of those lists!)
A Famous Color
Macaroni & cheese become a Crayola crayon color in 1993 as a part of their orange hue family.
The Perfect Pairing
Apparently, it is said the burgundy wine is the perfect wine to pair with mac & cheese. We’re definitely willing to give that a try, but we also enjoy it with an ice-cold Iowa-brewed beer or a big refreshing glass of iced tea and our youngest diners seem to enjoy it with a healthy glass of milk.

Our Unique BBQ Style
The Boot has a very unique approach when it comes to creating irresistible BBQ. It’s a hybrid style inspired by the BBQ meccas of the U.S.A. – Kansas City, St. Louis, Memphis, and Texas. All the best things about those amazing styles are what creates a BBQ flavor we are proud to call our own.
First, we slow-smoke our succulent meats over hickory allowing the incredible flavors of each type of meat to come through boldly. Next, those meats are coated (or served with a side of) our flavorful, house-made BBQ sauce. The end result is a plate full of hickory-smoked BBQ goodness that tickles your taste buds and satisfies even the biggest hunger!

Smoked Meat on a Bun
All of our slow-smoked meats are served on a freshly toasted bun. Sandwiches are always served “wet” (sauced) but feel free to ask us to leave it off if you prefer to sauce the sandwich yourself. Each of these plates also comes with your choice of one of our homestyle side dishes.
A sweet and smokey Italian sausage. We slow-smoke our sausage rope then slice into pieces. A hidden house favorite… Try it & you’ll love it.
Our pork is covered in our house made rub and then slow-smoked over hickory for 16 hours, trimmed, and hand-pulled.
Our brisket is generously rubbed with our secret house seasonings and then slow-smoked over hickory for 10 hours. We thick slice it with all the juice and bark to ensure the most mouthwatering and tender brisket possible.

We start out with a more-than-generous portion of meat. (This is one GIGANTIC sandwich!) Next, our chefs hand-dip it in buttermilk, followed by a coating of expertly seasoned flour and breadcrumbs. We serve up the best brunch in Des Moines every Saturday & Sunday, which means our breakfast options are every bit as tempting as our lunch and dinner items. We took our flavorful Farm Boy Burger and topped it with crisp bacon, a fried egg, and good ol’ American cheese. Breakfast for dinner on a fresh, soft bun!

The BBQ… (Duh!)
You don’t boast having the best BBQ in Des Moines unless you have the mouthwatering, hickory-smoked, house-recipe BBQ dishes to prove it, and that’s exactly what we serve 7 days a week right here at the Boot! Our style is best described as hybrid BBQ. It is a unique blend of the flavors and styles of the BBQ meccas of the good ol’ USA: Kansas City, St. Louis, Memphis, Texas, and the deep South.
The meats are generously coated in our special dry rub and smoked low and slow over hickory for maximum flavor and tenderness. Before serving, we add our house-recipe sauce (which we make right here) to complement the flavor of the meat. Our menu is filled with a fantastic variety of BBQ choices, as well as plenty of non-BBQ dishes that are every bit as tasty.
Five days a week you can join us for the best Happy Hour in Des Moines! Every Monday-Friday from 3-6 pm we invite you to pull up a bar stool (or sit at any table in the restaurant) and enjoy a few hours out of your day relaxing and socializing. We’ll have specialty drinks available at special prices plus you can enjoy any of our 18 draft beers at a discount! (Yes, that also includes the many local Iowa brews that we always have on tap!) It’s a great place to meet up with old friends and even make a few new ones.
Twice a week, every Friday and Saturday night after 5:00 pm, we add an irresistible menu item to our already extensive menu – Smoked Prime Rib! We generously cover each whole choice prime rib with our own wet rub and then hickory-smoke them 5 hours, ensuring the juiciest, most flavorful prime rib in Des Moines. Our Smoked Prime Rib Dinner is available as a 10-oz. or a 14-oz. cut and is served with Texas toast and your choice of 2 of our homestyle side dishes.
Also two times weekly you can head to the Boot early for the best weekend brunch in Des Moines. Starting at 9:00 am every Saturday and Sunday, our brunch menu is available. It features breakfast classics plus lots of specialty creations with our very own Wobbly Boots’ twist. It’s a great way to get your day started!
Occasionally our stage is graced with the best live music in Des Moines. Shows generally start around 9:00 pm so that you can come in before the music begins for dinner and stick around into the evening dancing and enjoying some fantastic entertainment. Coming up soon, we’ve got the Damon Dotson Trio on Saturday, January 19, 2019, and on Saturday, February 9, 2019, Trainwreck will be hitting the stage.
